- 1 1/2 cups rolled oats
- 1/2 cup almond flour
- 1/4 cup coconut oil, melted
- 2 tablespoons honey (for crust)
- Pinch of salt
- 1 1/4 cups whole milk ricotta cheese
- 1/3 cup Greek yogurt
- 1/4 cup honey (for filling)
- 1/2 teaspoon vanilla extract
- Zest of 1 lemon
- 1/3 cup chopped pistachios
- Extra honey for drizzling (optional)
Instructions
- Line an 8×8-inch baking pan with parchment paper.
- In a bowl, mix rolled oats, almond flour, melted coconut oil, 2 tablespoons honey, and a pinch of salt until combined.
- Press the mixture firmly into the bottom of the prepared pan to form a crust. Refrigerate for 10–15 minutes to set.
- Meanwhile, in another bowl, combine ricotta, Greek yogurt, 1/4 cup honey, vanilla extract, and lemon zest. Whisk until smooth and creamy.
- Spread the ricotta mixture evenly over the chilled crust.
- Sprinkle chopped pistachios over the top and press lightly to adhere. Drizzle with extra honey if desired.
- Refrigerate for at least 2 hours or until firm enough to slice.
- Cut into bars and serve chilled.
Notes
- Use full-fat ricotta for a creamier texture.
- For a vegan version, substitute with vegan ricotta and maple syrup instead of honey.
- Can be made ahead and stored in the fridge for up to 4 days.
