Description

These No-Bake Honey Pistachio Ricotta Bars are a creamy, nutty, and lightly sweetened Mediterranean-inspired dessert. With a wholesome oat base, a smooth ricotta-honey layer, and crunchy pistachio topping, they’re refreshing and satisfying — perfect for summer treats or elegant snacking.

  • 1 1/2 cups rolled oats
  • 1/2 cup almond flour
  • 1/4 cup coconut oil, melted
  • 2 tablespoons honey (for crust)
  • Pinch of salt
  • 1 1/4 cups whole milk ricotta cheese
  • 1/3 cup Greek yogurt
  • 1/4 cup honey (for filling)
  • 1/2 teaspoon vanilla extract
  • Zest of 1 lemon
  • 1/3 cup chopped pistachios
  • Extra honey for drizzling (optional)

Instructions

  1. Line an 8×8-inch baking pan with parchment paper.
  2. In a bowl, mix rolled oats, almond flour, melted coconut oil, 2 tablespoons honey, and a pinch of salt until combined.
  3. Press the mixture firmly into the bottom of the prepared pan to form a crust. Refrigerate for 10–15 minutes to set.
  4. Meanwhile, in another bowl, combine ricotta, Greek yogurt, 1/4 cup honey, vanilla extract, and lemon zest. Whisk until smooth and creamy.
  5. Spread the ricotta mixture evenly over the chilled crust.
  6. Sprinkle chopped pistachios over the top and press lightly to adhere. Drizzle with extra honey if desired.
  7. Refrigerate for at least 2 hours or until firm enough to slice.
  8. Cut into bars and serve chilled.

Notes

  • Use full-fat ricotta for a creamier texture.
  • For a vegan version, substitute with vegan ricotta and maple syrup instead of honey.
  • Can be made ahead and stored in the fridge for up to 4 days.
  • Add cardamom or rosewater for a Middle Eastern twist.
