These No-Bake Éclair Cupcakes are a quick and easy dessert inspired by the classic French treat. Layers of graham crackers, creamy vanilla pudding, and chocolate ganache make these cupcakes irresistibly delicious.

- 1 box (3.4 oz) instant vanilla pudding mix
- 2 cups cold milk
- 1 cup heavy cream
- 1/4 cup powdered sugar
- 1 tsp vanilla extract
- 12 cupcake liners
- 24 graham cracker squares
- 1 cup semisweet chocolate chips
- 1/2 cup heavy cream (for ganache)
Instructions
- In a medium bowl, whisk together the pudding mix and cold milk until thickened. Set aside.
- In another bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form. Fold the whipped cream into the pudding mixture.
- Line a muffin tin with cupcake liners. Place a graham cracker square at the bottom of each liner (break to fit as needed).
- Spoon a layer of the pudding mixture over the graham cracker. Repeat layers until cupcake liners are full, ending with pudding mixture on top.
- For the ganache: heat 1/2 cup heavy cream until steaming, then pour over chocolate chips. Let sit 2 minutes, then stir until smooth.
- Spread or drizzle the ganache over each cupcake. Refrigerate for at least 4 hours or overnight for best texture.
Notes
- These cupcakes are best made a day ahead so the graham crackers soften fully.
- Top with whipped cream or chocolate shavings for extra flair.
- You can use chocolate pudding for a richer flavor.
