- 1 cup crushed pineapple, well drained
- 2 cups shredded coconut (unsweetened or sweetened, as preferred)
- 1/2 cup sweetened condensed milk
- 1 teaspoon vanilla extract
- Pinch of salt
- 1/4 cup extra shredded coconut for coating (optional)
Instructions
- Line a baking sheet with parchment paper and set in the fridge to chill.
- In a large mixing bowl, combine the well-drained crushed pineapple, shredded coconut, sweetened condensed milk, vanilla extract, and a pinch of salt. Stir until fully combined.
- If the mixture feels too loose, refrigerate it for 10 to 15 minutes to firm up slightly.
- Scoop small portions of the mixture (about 1 tablespoon each) and roll into bite-sized balls with your hands.
- Roll each ball in the extra shredded coconut until evenly coated, if using.
- Place the coated bites on the chilled parchment-lined baking sheet and refrigerate for at least 30 minutes to set.
- Serve chilled. Store leftovers in an airtight container in the refrigerator.
Notes
- Drain the pineapple well to avoid a soggy mixture.
- Chill the mixture briefly before rolling to make shaping easier.
- For extra flavor, lightly toast the shredded coconut before using it in the mixture or for coating.
- To make them firmer, freeze the bites for 15 to 20 minutes before serving.
- For a vegan version, replace sweetened condensed milk with thick coconut cream plus powdered sugar to taste.
