Description
This no-bake blueberry pie is cool, creamy, and full of bright berry flavor. It has a buttery graham cracker crust, a smooth cream cheese filling, and a glossy blueberry gelatin topping that makes every slice feel light, sweet, and refreshing.
Ingredients
Scale
- 1 1/2 cups graham cracker crumbs
- 2 tablespoons granulated sugar
- 6 tablespoons melted butter
- 1 package (3 ounces) blueberry gelatin powder
- 1 cup boiling water
- 1/2 cup cold water
- 1 cup fresh blueberries
- 8 ounces cream cheese, softened
- 1/2 cup powdered sugar
- 1 1/2 cups whipped topping
Instructions
- In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter until the mixture looks like damp sand.
- Press the crust mixture firmly into a 9 inch pie dish, covering the bottom and sides evenly. Chill for 15 minutes.
- In a mixing bowl, beat the softened cream cheese and powdered sugar until smooth and creamy.
- Fold in the whipped topping gently until the filling is light and fluffy.
- Spread the cream cheese filling evenly over the chilled crust.
- In another bowl, dissolve the blueberry gelatin powder in the boiling water, stirring until fully dissolved. Stir in the cold water and let the mixture cool slightly.
- Add the fresh blueberries to the gelatin mixture.
- Carefully pour the blueberry mixture over the cream layer.
- Refrigerate the pie for at least 3 hours, or until fully set.
- Slice and serve chilled.
Notes
- For cleaner slices, chill the pie overnight.
- Let the gelatin mixture cool slightly before pouring so it does not melt the cream layer.
- A warm knife wiped clean between cuts helps keep the layers neat.
- Frozen blueberries can be used if thawed and drained well.
