Ingredients
- Boneless skinless chicken breasts – 4 pieces (about 6 oz each)
- Baby potatoes – 1.5 lb, halved
- Olive oil – 5 tbsp, divided
- Garlic – 4 cloves, minced
- Fresh rosemary – 1 tbsp, finely chopped
- Lemon juice – 2 tbsp, plus extra to taste
- Fresh parsley – 1 cup, packed
- Fresh chives – 1/2 cup, chopped
- Greek yogurt – 1/2 cup
- Kosher salt – 1 1/2 tsp, divided
- Black pepper – 1 tsp, divided
Instructions
- Preheat grill or grill pan to medium-high and preheat oven to 425°F (220°C).
- Marinate chicken by combining 2 tbsp olive oil, half the minced garlic, lemon juice, 1/2 tsp salt, and 1/2 tsp pepper. Coat chicken and rest 30 minutes.
- Toss potatoes with remaining olive oil, remaining garlic, rosemary, 1/2 tsp salt, and 1/4 tsp pepper. Spread on a rimmed baking sheet.
- Roast potatoes for 25 to 30 minutes, flipping halfway, until deeply golden and crisp at the edges.
- Grill chicken 6 to 7 minutes per side until nicely charred and internal temperature reaches 165°F (74°C). Rest 5 minutes.
- Blend parsley, chives, Greek yogurt, 1 tbsp olive oil, a splash of lemon juice, and remaining 1/2 tsp salt until smooth and creamy. Adjust seasoning to taste.
- Slice chicken, plate with crispy potatoes, and drizzle generously with the creamy herb sauce. Garnish with extra herbs if desired.
