- 2 tablespoons olive oil
- 1 large onion, chopped
- 4 cloves garlic, minced
- 2 medium sweet potatoes, peeled and diced
- 2 cups mushrooms, sliced
- 1 can (15 oz) white beans, drained and rinsed
- 3 cups kale, chopped
- 6 cups vegetable broth
- 1 teaspoon fresh thyme
- 1 teaspoon fresh rosemary, chopped
- 1 teaspoon salt, or to taste
- 1/2 teaspoon black pepper
Instructions
- Set your soup pot over medium heat and let it warm for a minute.
- Pour in the olive oil, then sauté the chopped onion until soft and golden. Stir in the garlic, thyme, and rosemary for about a minute until fragrant.
- Add the diced sweet potatoes and mushrooms. Stir well to coat them in the herby oil and let them cook for about 5 minutes.
- Pour in the vegetable broth and bring it to a simmer. Add the white beans and a pinch of salt and pepper.
- Let the soup simmer gently for 20 to 25 minutes, until the sweet potatoes are tender and the flavors have mingled.
- Stir in the kale and let it cook for 3 to 5 minutes until wilted but still vibrant. Adjust seasoning with more salt, pepper, or a splash of lemon if desired.
- Ladle into warm bowls, sprinkle with extra herbs if you like, and serve with crusty bread or on its own for a nourishing night in.
