- 1 lb ground beef
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 2 cups mixed vegetables (carrots, peas, corn)
- 2 tbsp tomato paste
- 1 cup beef broth
- 1 tsp Worcestershire sauce
- Salt and pepper, to taste
- 3 cups mashed potatoes (prepared)
- 2 tbsp olive oil
- 1 tsp dried thyme
- 1/2 cup shredded cheddar cheese (optional)
Instructions
- Preheat oven to 400°F (200°C).
- Heat olive oil in a large skillet over medium heat. Add onion and garlic, sauté until softened.
- Add ground beef and cook until browned. Drain excess fat.
- Stir in tomato paste, Worcestershire sauce, thyme, salt, and pepper.
- Add mixed vegetables and beef broth. Simmer until the mixture thickens, about 10 minutes.
- Transfer the beef mixture to a baking dish and spread mashed potatoes evenly over the top.
- Sprinkle shredded cheddar cheese on top if using.
- Bake for 20–25 minutes until the top is golden and bubbly.
- Let cool slightly before serving.
