- 4 ripe peaches, halved and pitted
- 2 teaspoons fresh thyme leaves
- 1 tablespoon honey
- 1 tablespoon olive oil
- Salt and black pepper to taste
- 150g thinly sliced mortadella
- Fresh burrata or mozzarella (optional)
- Crusty bread or crostini, for serving
Instructions
- Preheat oven to 200°C (400°F).
- Place peach halves cut-side up on a baking tray. Drizzle with honey and olive oil, then sprinkle with thyme, salt, and pepper.
- Roast for 15–20 minutes or until tender and slightly caramelized.
- Remove from oven and let cool slightly.
- Arrange mortadella slices on a platter with roasted peaches. Add fresh burrata or mozzarella if using.
- Serve with crusty bread or crostini for scooping and spreading.
Notes
- Use nectarines as a substitute if peaches aren’t available.
- For added depth, add a splash of balsamic glaze before serving.
- Chill roasted peaches ahead of time for a refreshing contrast.
- This dish pairs beautifully with a light white wine or prosecco.
