  • 1/2 cup vegetable oil
  • 4 large eggs
  • 1 can (20 oz) crushed pineapple in juice, undrained
  • 1 tsp vanilla extract
  • For the Frosting:
  • 1 package (8 oz) cream cheese, softened
  • 1 package (3.4 oz) instant vanilla pudding mix
  • 1 can (20 oz) crushed pineapple in juice, drained
  • 1 container (8 oz) whipped topping (like Cool Whip), thawed

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13-inch baking dish.
  2. In a large bowl, mix together cake mix, oil, eggs, vanilla, and 1 can of crushed pineapple with juice until well combined.
  3. Pour the batter into the prepared baking dish and smooth the top.
  4. Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
  5. Let the cake cool completely in the pan.
  6. To make the frosting: In a medium bowl, beat cream cheese until smooth. Add pudding mix and mix well.
  7. Fold in the drained crushed pineapple, then gently fold in the whipped topping until fully combined.
  8. Spread the frosting evenly over the cooled cake.
  9. Refrigerate for at least 1 hour before serving for best texture and flavor.

Notes

  • Make sure the cake is completely cool before adding the frosting to prevent it from melting.
  • For added flair, top with toasted coconut or maraschino cherries before serving.
  • This cake tastes even better after chilling overnight.
