Description

Ingredients

  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup light brown sugar
  • 3 large eggs
  • 1 1/2 cups apple cider (reduced to 3/4 cup)
  • 1/2 cup sour cream
  • 2 teaspoons vanilla extract
  • 1 to 1 1/2 cups powdered sugar (for glaze)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 10- to 12-cup bundt pan with butter and flour or baking spray.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.
  3. In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  5. Reduce the apple cider by simmering it in a small saucepan until it measures 3/4 cup. Let cool slightly.
  6. Alternate adding the dry ingredients, reduced cider, and sour cream into the wet mixture, mixing just until combined.
  7. Pour batter evenly into the prepared bundt pan and smooth the top.
  8. Bake for 50 to 60 minutes or until a toothpick inserted comes out clean.
  9. Cool in pan for 10 minutes, then invert onto a wire rack to cool completely.
  10. Whisk powdered sugar with a few tablespoons of apple cider to make a pourable glaze. Drizzle over the cooled cake.
