Description

A decadent combination of fudgy brownies and refreshing mint, topped with a smooth minty ganache for a perfect balance of chocolate and mint.


Ingredients

  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 tsp salt
  • 1/4 tsp baking powder
  • 1/2 cup semisweet chocolate chips
  • 1/2 cup heavy cream
  • 1 tsp peppermint extract
  • 2 cups powdered sugar
  • Green food coloring (optional)
  • 1/2 cup semisweet chocolate chips (for ganache)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line an 8×8-inch baking pan with parchment paper.
  2. In a bowl, whisk together melted butter, sugar, eggs, and vanilla extract until smooth.
  3. Mix in cocoa powder, flour, salt, and baking powder until well combined. Fold in chocolate chips.
  4. Pour batter into prepared pan and bake for 25-30 minutes, or until a toothpick inserted comes out with a few moist crumbs.
  5. Cool brownies in the pan on a wire rack.
  6. In a separate bowl, heat heavy cream in the microwave until warm. Stir in peppermint extract and food coloring, if using.
  7. Mix in powdered sugar until smooth and thick, then spread the mint layer over cooled brownies.
  8. For the ganache, melt chocolate chips in a microwave or double boiler. Pour over the mint layer and spread evenly.
  9. Chill brownies in the fridge for at least 2 hours to set the ganache before slicing and serving.

Notes

  • For extra mint flavor, increase the peppermint extract to 1 1/2 teaspoons.
  • Allow the brownies to cool completely before cutting to ensure clean slices.
  • If you like a thicker mint layer, increase the amount of powdered sugar in the filling.
