A decadent combination of fudgy brownies and refreshing mint, topped with a smooth minty ganache for a perfect balance of chocolate and mint.

- 1/2 cup unsalted butter, melted
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/3 cup unsweetened cocoa powder
- 1/2 cup all-purpose flour
- 1/4 tsp salt
- 1/4 tsp baking powder
- 1/2 cup semisweet chocolate chips
- 1/2 cup heavy cream
- 1 tsp peppermint extract
- 2 cups powdered sugar
- Green food coloring (optional)
- 1/2 cup semisweet chocolate chips (for ganache)
Instructions
- Preheat oven to 350°F (175°C). Grease and line an 8×8-inch baking pan with parchment paper.
- In a bowl, whisk together melted butter, sugar, eggs, and vanilla extract until smooth.
- Mix in cocoa powder, flour, salt, and baking powder until well combined. Fold in chocolate chips.
- Pour batter into prepared pan and bake for 25-30 minutes, or until a toothpick inserted comes out with a few moist crumbs.
- Cool brownies in the pan on a wire rack.
- In a separate bowl, heat heavy cream in the microwave until warm. Stir in peppermint extract and food coloring, if using.
- Mix in powdered sugar until smooth and thick, then spread the mint layer over cooled brownies.
- For the ganache, melt chocolate chips in a microwave or double boiler. Pour over the mint layer and spread evenly.
- Chill brownies in the fridge for at least 2 hours to set the ganache before slicing and serving.
Notes
- For extra mint flavor, increase the peppermint extract to 1 1/2 teaspoons.
- Allow the brownies to cool completely before cutting to ensure clean slices.
- If you like a thicker mint layer, increase the amount of powdered sugar in the filling.
