Description

Mint Brownies are rich, fudgy chocolate brownies topped with a refreshing mint frosting and a smooth chocolate ganache. Perfect for holidays or anytime you want a decadent dessert with a cool twist.

    • 1/2 cup (1 stick) unsalted butter, melted
    • 1 cup granulated sugar
    • 2 large eggs
    • 1 tsp vanilla extract
    • 1/3 cup unsweetened cocoa powder
    • 1/2 cup all-purpose flour
    • 1/4 tsp salt
    • 1/4 tsp baking powder

 

    • For the Mint Layer:
    • 1/4 cup unsalted butter, softened
    • 2 tbsp milk
    • 1 1/2 cups powdered sugar
    • 1/2 tsp peppermint extract
    • Green food coloring (optional)

 

  • For the Chocolate Ganache:
  • 3/4 cup semi-sweet chocolate chips
  • 2 tbsp unsalted butter

Instructions

  1. Preheat oven to 350°F (175°C). Grease or line an 8×8-inch baking pan with parchment paper.
  2. Make the brownies: In a bowl, mix melted butter, sugar, eggs, and vanilla. Add cocoa powder, flour, salt, and baking powder; stir until combined. Pour into the prepared pan and bake for 20–25 minutes. Let cool completely.
  3. Make the mint layer: Beat softened butter until creamy. Add milk, peppermint extract, and powdered sugar. Mix until smooth. Add green food coloring, if desired. Spread evenly over cooled brownies and refrigerate for 15–20 minutes to set.
  4. Make the ganache: In a microwave-safe bowl, melt chocolate chips and butter in 30-second intervals, stirring until smooth. Pour over mint layer and spread evenly. Chill for another 20 minutes until the ganache is firm.
  5. Cut into squares and serve chilled or at room temperature.

  • Let brownies fully cool before adding mint and chocolate layers to avoid melting.
  • For clean cuts, use a warm knife and wipe between slices.
