Description

These Mini Meatloaves are tender, flavorful, and topped with a sweet and tangy glaze. Made with ground turkey, peppers, onions, and seasonings, they’re a lighter take on a comfort food classic and perfect for weeknight dinners.


Ingredients

  • 2 tablespoons olive oil, divided
  • 1/2 cup diced green bell pepper
  • 1/4 cup diced onion
  • 1 pound ground turkey (93/7)
  • 1 large egg, lightly beaten
  • 1/3 cup breadcrumbs
  • 1 tablespoon ketchup
  • 1 tablespoon Dijon mustard
  • 2 teaspoons Worcestershire sauce
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon Italian seasoning
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper

For the glaze:

  • 1/4 cup ketchup
  • 1 tablespoon chili sauce
  • 1 tablespoon maple syrup
  • 1 teaspoon Worcestershire sauce
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 375°F (190°C). Grease a muffin tin or line with parchment squares.
  2. In a skillet, heat 1 tablespoon olive oil over medium heat. Sauté the diced bell pepper and onion until softened, about 3–4 minutes. Remove from heat and let cool slightly.
  3. In a large bowl, combine ground turkey, egg, breadcrumbs, ketchup, Dijon mustard, Worcestershire sauce, garlic powder, Italian seasoning, salt, pepper, and the cooked peppers and onions. Mix gently until just combined.
  4. Divide the mixture evenly among the muffin tin cups, shaping into mini loaves.
  5. In a small bowl, whisk together ketchup, chili sauce, maple syrup, Worcestershire sauce, salt, and pepper to make the glaze.
  6. Spoon the glaze over the tops of each mini loaf.
  7. Bake for 25–30 minutes, or until the internal temperature reaches 165°F (74°C).
  8. Let cool for a few minutes before serving.

Notes

  • You can substitute ground beef or chicken for turkey.
  • Mini meatloaves freeze well; reheat in the oven for best texture.
  • Great served with mashed potatoes or roasted veggies.
  • Use a meat thermometer to ensure doneness without overcooking.
