Description

Millionaire Pie is a no-bake, creamy dessert filled with crushed pineapple, cherries, coconut, and pecans in a buttery graham cracker crust. It’s refreshing, sweet, and perfect for summer gatherings or holidays.

  • 1 (9-inch) graham cracker crust
  • 15 ounces crushed pineapple, drained well
  • 14 ounces sweetened condensed milk
  • 1 cup maraschino cherries, chopped
  • 3/4 cup shredded coconut
  • 1/2 cup pecans, chopped
  • 1/4 cup lemon juice
  • 1 tablespoon maraschino cherry juice
  • 8 ounces whipped cream, divided

Instructions

  1. In a large bowl, combine sweetened condensed milk, lemon juice, and cherry juice. Stir until well mixed and slightly thickened.
  2. Fold in the drained pineapple, chopped cherries, coconut, and pecans.
  3. Gently fold in half of the whipped cream until fully incorporated.
  4. Spoon the mixture into the graham cracker crust, smoothing the top with a spatula.
  5. Spread the remaining whipped cream evenly over the top as a topping.
  6. Refrigerate for at least 4 hours, or until firm and chilled.
  7. Slice and serve cold.

Notes

  • Make sure to drain the pineapple very well to prevent a runny filling.
  • For extra flavor, toast the coconut and pecans before adding them.
  • This pie can be made a day in advance and stored in the refrigerator.
