- 1 (9-inch) graham cracker crust
- 15 ounces crushed pineapple, drained well
- 14 ounces sweetened condensed milk
- 1 cup maraschino cherries, chopped
- 3/4 cup shredded coconut
- 1/2 cup pecans, chopped
- 1/4 cup lemon juice
- 1 tablespoon maraschino cherry juice
- 8 ounces whipped cream, divided
Instructions
- In a large bowl, combine sweetened condensed milk, lemon juice, and cherry juice. Stir until well mixed and slightly thickened.
- Fold in the drained pineapple, chopped cherries, coconut, and pecans.
- Gently fold in half of the whipped cream until fully incorporated.
- Spoon the mixture into the graham cracker crust, smoothing the top with a spatula.
- Spread the remaining whipped cream evenly over the top as a topping.
- Refrigerate for at least 4 hours, or until firm and chilled.
- Slice and serve cold.
Notes
- Make sure to drain the pineapple very well to prevent a runny filling.
- For extra flavor, toast the coconut and pecans before adding them.
- This pie can be made a day in advance and stored in the refrigerator.
- Top with extra cherries or pecans before serving for a pretty presentation.
