- 4 ½ cups all-purpose flour
- 1 ½ cups lukewarm water
- 1 tbsp light brown sugar
- 2 tsp kosher salt
- 2 ¼ tsp fast-acting dry yeast
- 4 tbsp melted unsalted butter
- Coarse sea salt, for topping
Baking Soda Water Bath
- 10 cups water
- ⅔ cup baking soda
Egg Wash
- 1 egg yolk
- 1 tsp water
Pizza Toppings
- 1 small jar pizza sauce
- 1 small pack shredded cheese (cheddar or mozzarella)
- 1 pack mini pepperonis
Instructions
- In a large bowl, whisk together lukewarm water, brown sugar, and yeast. Let sit for 5 minutes until foamy.
- Add flour, kosher salt, and melted butter. Mix until dough forms, then knead on a floured surface for about 5–7 minutes until smooth and elastic.
- Place dough in a greased bowl, cover, and let rise in a warm spot for 1 hour, or until doubled in size.
- Preheat oven to 450°F (230°C) and line two baking sheets with parchment paper.
- Bring 10 cups of water and baking soda to a boil in a large pot.
- Divide dough into equal pieces, roll into ropes, and shape into classic pretzels (or Mickey-shaped if desired).
- Carefully drop each pretzel into the boiling baking soda bath for 30 seconds, then transfer to baking sheets.
- Brush each pretzel with egg wash, then sprinkle with coarse sea salt.
- Bake for 10–12 minutes, until golden brown.
- Remove pretzels from oven, spread a spoonful of pizza sauce on top, sprinkle with cheese, and add mini pepperonis.
- Return to oven for 3–4 minutes, just until cheese is melted and bubbly.
