Description

Mickey’s Pizza Pretzel combines the fun of a soft, chewy homemade pretzel with all the flavors of a classic pizza. Golden brown pretzels are topped with tangy pizza sauce, gooey melted cheese, and mini pepperonis for a snack that’s both playful and delicious—perfect for parties, game nights, or family baking fun.

Ingredients

Scale

Pretzels

  • 4 ½ cups all-purpose flour
  • 1 ½ cups lukewarm water
  • 1 tbsp light brown sugar
  • 2 tsp kosher salt
  • 2 ¼ tsp fast-acting dry yeast
  • 4 tbsp melted unsalted butter
  • Coarse sea salt, for topping

Baking Soda Water Bath

  • 10 cups water
  • ⅔ cup baking soda

Egg Wash

  • 1 egg yolk
  • 1 tsp water

Pizza Toppings

  • 1 small jar pizza sauce
  • 1 small pack shredded cheese (cheddar or mozzarella)
  • 1 pack mini pepperonis

Instructions

  1. In a large bowl, whisk together lukewarm water, brown sugar, and yeast. Let sit for 5 minutes until foamy.
  2. Add flour, kosher salt, and melted butter. Mix until dough forms, then knead on a floured surface for about 5–7 minutes until smooth and elastic.
  3. Place dough in a greased bowl, cover, and let rise in a warm spot for 1 hour, or until doubled in size.
  4. Preheat oven to 450°F (230°C) and line two baking sheets with parchment paper.
  5. Bring 10 cups of water and baking soda to a boil in a large pot.
  6. Divide dough into equal pieces, roll into ropes, and shape into classic pretzels (or Mickey-shaped if desired).
  7. Carefully drop each pretzel into the boiling baking soda bath for 30 seconds, then transfer to baking sheets.
  8. Brush each pretzel with egg wash, then sprinkle with coarse sea salt.
  9. Bake for 10–12 minutes, until golden brown.
  10. Remove pretzels from oven, spread a spoonful of pizza sauce on top, sprinkle with cheese, and add mini pepperonis.
  11. Return to oven for 3–4 minutes, just until cheese is melted and bubbly.
  12. Serve warm and enjoy your pizza-pretzel combo!

Notes

  • For a vegetarian option, leave off the pepperonis and load up with veggies like bell peppers, mushrooms, or olives.
  • Shaping the pretzels into Mickey Mouse heads makes them extra fun for kids’ parties.
  • You can also prepare the pretzels in advance and just add pizza toppings before reheating.
  • Don’t skip the baking soda bath—it’s the secret to that classic chewy pretzel crust.
