- 2 tablespoons olive oil
- 1 red bell pepper, diced
- 1 zucchini, diced
- 1/2 red onion, sliced
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon ground cumin
- Salt and pepper, to taste
- Juice of 1 lemon
- 1/4 cup chopped fresh parsley
- Optional toppings: crumbled feta cheese, olives, tzatziki sauce
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add ground beef and cook, breaking it apart, until browned and fully cooked. Drain excess fat if necessary.
- Add the garlic, red onion, red bell pepper, and zucchini to the skillet. Cook for 5–7 minutes until the vegetables are tender.
- Season with oregano, cumin, salt, and pepper. Stir to combine.
- Remove from heat and stir in lemon juice and chopped parsley.
- Serve immediately, topped with optional feta, olives, or tzatziki if desired.
Notes
- For a lighter version, use ground turkey or chicken instead of beef.
- Serve over rice, quinoa, or in lettuce wraps for different variations.
- Adjust the vegetables according to what you have available, such as adding spinach or eggplant.
