- 1 pound ground beef
- 1 large zucchini, sliced
- 1 cup cherry tomatoes, halved
- 1 red bell pepper, chopped
- 1/2 cup kalamata olives, pitted and sliced
- 1/2 cup feta cheese, crumbled
- 3 garlic cloves, minced
- 2 tablespoons olive oil
- 1/4 cup tahini
- Juice of 1 lemon
- 1 teaspoon dried oregano
- 1/2 teaspoon ground cumin
- Salt and pepper, to taste
- 2 tablespoons water
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add minced garlic and sauté for 30 seconds until fragrant.
- Add ground beef and cook until browned, breaking it apart. Season with oregano, cumin, salt, and pepper.
- Push beef to one side of the skillet and add zucchini, bell pepper, and cherry tomatoes. Sauté until just tender.
- Mix beef and vegetables together and cook for another 2 minutes.
- In a small bowl, whisk together tahini, lemon juice, water, salt, and pepper until smooth.
- Remove skillet from heat. Top with olives and crumbled feta.
- Serve warm in bowls, drizzled with lemon tahini sauce.
Notes
- Use lean ground beef to avoid greasy texture.
- Adjust the tahini sauce thickness with a splash of water if needed.
- For extra zest, garnish with fresh parsley or dill.
