Description

A colorful and hearty Mediterranean-inspired bowl featuring spiced ground beef, fresh sautéed vegetables, briny olives, crumbled feta, and a zesty lemon tahini sauce. Quick to prepare and perfect for meal prep or a cozy dinner.


Ingredients

  • 1 pound ground beef
  • 1 large zucchini, sliced
  • 1 cup cherry tomatoes, halved
  • 1 red bell pepper, chopped
  • 1/2 cup kalamata olives, pitted and sliced
  • 1/2 cup feta cheese, crumbled
  • 3 garlic cloves, minced
  • 2 tablespoons olive oil
  • 1/4 cup tahini
  • Juice of 1 lemon
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground cumin
  • Salt and pepper, to taste
  • 2 tablespoons water

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add minced garlic and sauté for 30 seconds until fragrant.
  3. Add ground beef and cook until browned, breaking it apart. Season with oregano, cumin, salt, and pepper.
  4. Push beef to one side of the skillet and add zucchini, bell pepper, and cherry tomatoes. Sauté until just tender.
  5. Mix beef and vegetables together and cook for another 2 minutes.
  6. In a small bowl, whisk together tahini, lemon juice, water, salt, and pepper until smooth.
  7. Remove skillet from heat. Top with olives and crumbled feta.
  8. Serve warm in bowls, drizzled with lemon tahini sauce.

Notes

  • Use lean ground beef to avoid greasy texture.
  • Adjust the tahini sauce thickness with a splash of water if needed.
  • For extra zest, garnish with fresh parsley or dill.
  • Great served over couscous, rice, or greens.
