- 2 boneless, skinless chicken breasts
- 2 medium zucchinis, sliced
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon garlic powder

- 1/2 cup crumbled feta cheese
- 1/2 cup cherry tomatoes, halved
- 1/4 cup Kalamata olives, pitted and sliced
- 1 tablespoon fresh parsley, chopped (optional)
- 1 tablespoon lemon juice
- 1/4 teaspoon red pepper flakes (optional)
Instructions
- Preheat oven to 375°F (190°C). Grease a baking dish with olive oil or cooking spray.
- Season chicken breasts with olive oil, oregano, basil, garlic powder, salt, and pepper.
- Arrange the seasoned chicken breasts in the center of the prepared baking dish.
- Surround the chicken with sliced zucchinis, cherry tomatoes, and Kalamata olives.
- Sprinkle crumbled feta cheese over the chicken and vegetables.
- Drizzle with lemon juice and sprinkle red pepper flakes if using.
- Bake for 30–35 minutes, or until chicken is cooked through and the internal temperature reaches 165°F (75°C).
- Garnish with fresh parsley before serving. Serve with a side of quinoa or whole-grain bread for a complete meal.
Notes
- Feel free to swap the feta with goat cheese for a different flavor.
- For added depth, marinate the chicken for 30 minutes in olive oil, lemon juice, and herbs before baking.
- If you prefer more veggies, add bell peppers or red onions to the bake.
