Description

Marry Me Lentils are a rich and flavorful dish made with hearty lentils, tomatoes, and a blend of aromatic spices. Ingredients

  • 1 cup dried green or brown lentils, rinsed and drained
  • 2 tbsp olive oil
  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 tsp ground cumin
  • 1/2 tsp ground turmeric
  • 1/2 tsp ground coriander
  • 1/4 tsp ground cinnamon
  • 1/4 tsp ground black pepper
  • 1/2 tsp salt (or to taste)
  • 2 cups vegetable broth or water
  • 1 tbsp lemon juice
  • 1/4 cup fresh cilantro, chopped (for garnish)
  • 1/4 tsp chili flakes (optional, for heat)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the chopped onion and sauté until soft and translucent, about 5 minutes.
  2. Add the minced garlic and cook for another 1-2 minutes, until fragrant.
  3. Stir in the cumin, turmeric, coriander, cinnamon, black pepper, and salt. Cook for 1 minute to let the spices bloom.
  4. Add the diced tomatoes, rinsed lentils, and vegetable broth (or water). Stir to combine.
  5. Bring the mixture to a boil, then reduce the heat to low and cover. Let it simmer for 30-40 minutes, or until the lentils are tender and the liquid has absorbed (add more broth or water if necessary). Stir occasionally to prevent sticking.
  6. Once the lentils are cooked, stir in the lemon juice and adjust the seasoning with salt and pepper if needed.
  7. Garnish with fresh cilantro and a pinch of chili flakes for added heat, if desired. Serve hot as a main dish or a side.

Notes

  • If you want a richer flavor, you can add coconut milk to the dish while it simmers.
  • These lentils pair well with rice, naan, or a simple side salad.
  • For extra protein, consider adding cooked chicken, tofu, or chickpeas.
