- 1 cup dried green or brown lentils, rinsed and drained
- 2 tbsp olive oil
- 1 medium onion, chopped
- 3 garlic cloves, minced
- 1 can (14.5 oz) diced tomatoes
- 1 tsp ground cumin
- 1/2 tsp ground turmeric
- 1/2 tsp ground coriander
- 1/4 tsp ground cinnamon
- 1/4 tsp ground black pepper
- 1/2 tsp salt (or to taste)
- 2 cups vegetable broth or water
- 1 tbsp lemon juice
- 1/4 cup fresh cilantro, chopped (for garnish)
- 1/4 tsp chili flakes (optional, for heat)
Instructions
- Heat olive oil in a large pot over medium heat. Add the chopped onion and sauté until soft and translucent, about 5 minutes.
- Add the minced garlic and cook for another 1-2 minutes, until fragrant.
- Stir in the cumin, turmeric, coriander, cinnamon, black pepper, and salt. Cook for 1 minute to let the spices bloom.
- Add the diced tomatoes, rinsed lentils, and vegetable broth (or water). Stir to combine.
- Bring the mixture to a boil, then reduce the heat to low and cover. Let it simmer for 30-40 minutes, or until the lentils are tender and the liquid has absorbed (add more broth or water if necessary). Stir occasionally to prevent sticking.
- Once the lentils are cooked, stir in the lemon juice and adjust the seasoning with salt and pepper if needed.
- Garnish with fresh cilantro and a pinch of chili flakes for added heat, if desired. Serve hot as a main dish or a side.
Notes
- If you want a richer flavor, you can add coconut milk to the dish while it simmers.
- These lentils pair well with rice, naan, or a simple side salad.
- For extra protein, consider adding cooked chicken, tofu, or chickpeas.
