Description

Creamy marinated feta cubes nestled among roasted cherry tomatoes, infused with olive oil, garlic, and herbs. A warm, rustic dish perfect for sharing.


Ingredients

  • 200 grams feta cheese, cut into cubes
  • 250 grams cherry tomatoes, whole
  • 1/4 cup olive oil
  • 2 cloves garlic, smashed
  • 45 sprigs fresh thyme
  • 1/2 teaspoon red pepper flakes
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, combine feta cubes, olive oil, garlic, thyme, red pepper flakes, and black pepper.
  3. Transfer mixture to a small baking dish. Nestle cherry tomatoes around the feta.
  4. Drizzle any remaining oil over the top.
  5. Bake uncovered for 20 to 25 minutes, until tomatoes are blistered and feta is golden at the edges.
  6. Garnish with extra thyme or olive oil if desired.
  7. Serve warm with bread or over grains and salads.
