- 200 grams feta cheese, cut into cubes
- 250 grams cherry tomatoes, whole
- 1/4 cup olive oil
- 2 cloves garlic, smashed
- 4–5 sprigs fresh thyme
- 1/2 teaspoon red pepper flakes
- 1/4 teaspoon black pepper
Instructions
- Preheat oven to 400°F (200°C).
- In a bowl, combine feta cubes, olive oil, garlic, thyme, red pepper flakes, and black pepper.
- Transfer mixture to a small baking dish. Nestle cherry tomatoes around the feta.
- Drizzle any remaining oil over the top.
- Bake uncovered for 20 to 25 minutes, until tomatoes are blistered and feta is golden at the edges.
- Garnish with extra thyme or olive oil if desired.
- Serve warm with bread or over grains and salads.

- Let feta marinate longer for deeper flavor.
- Use a smaller baking dish to keep ingredients close and saucy.
- Add lemon zest for brightness before serving.
