- 4 chicken chops
- 1 cup fresh parsley, finely chopped
- 1/2 cup fresh cilantro, chopped
- 4 garlic cloves, minced
- 1/2 cup olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat a skillet or grill pan over medium heat until hot.
- In a mixing bowl, combine parsley, cilantro, garlic, olive oil, red wine vinegar, oregano, red pepper flakes, salt, and black pepper.
- Lightly oil the cooking pan to prevent sticking.
- Coat the chicken chops with half of the chimichurri mixture and allow them to marinate for at least 30 minutes.
- Cook the chicken for 6 to 7 minutes on each side until golden and fully cooked through.
- Remove from heat and let the chicken rest for a few minutes.
- Spoon the remaining chimichurri sauce over the chicken and serve warm.
