- For the crust:
- 1 1/2 cups all-purpose flour
- 1/2 cup powdered sugar
- 1/2 cup unsalted butter, softened
- 1/4 tsp salt
- For the mango filling:
- 2 ripe mangos, peeled and pureed
- 2 large eggs
- 1/2 cup granulated sugar
- 1/4 cup all-purpose flour
- 1/4 tsp salt
- 1/2 tsp vanilla extract
- For the lime glaze:
- 1/2 cup powdered sugar
- 1 tbsp lime juice
- 1/2 tsp lime zest
Instructions
- Preheat the oven to 350°F (175°C). Grease an 8×8-inch baking dish or line it with parchment paper for easy removal.
- In a medium bowl, combine the flour, powdered sugar, and salt for the crust. Add the softened butter and mix until the dough comes together.
- Press the dough evenly into the bottom of the prepared baking dish to form the crust. Bake for 15-18 minutes, or until the crust is lightly golden brown. Remove from the oven and set aside to cool slightly.
- In a separate bowl, whisk together the mango puree, eggs, granulated sugar, flour, salt, and vanilla extract until smooth and well combined.
- Pour the mango filling over the partially cooled crust and spread it evenly. Bake for an additional 25-30 minutes, or until the filling is set and a toothpick inserted comes out clean.
- Remove from the oven and let the bars cool completely in the baking dish. Once cooled, refrigerate for at least 1 hour to allow the filling to firm up.
- For the lime glaze, whisk together the powdered sugar, lime juice, and lime zest in a small bowl until smooth.
- Once the bars are chilled and firm, drizzle the lime glaze over the top. Cut into squares and serve.
Notes
- For an extra tropical twist, you can add shredded coconut to the crust or the filling.
- These bars are best served chilled and can be stored in an airtight container in the fridge for up to 4 days.
- If you prefer a thicker glaze, simply add more powdered sugar until you reach your desired consistency.
