Description

Mango Bars with Lime Glaze are a sweet and tangy dessert with a buttery, crumbly crust and a smooth mango filling. Topped with a refreshing lime glaze, these bars offer a perfect balance of tropical sweetness and citrusy zing.

  • For the crust:
  • 1 1/2 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 1/4 tsp salt
  • For the mango filling:
  • 2 ripe mangos, peeled and pureed
  • 2 large eggs
  • 1/2 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1/4 tsp salt
  • 1/2 tsp vanilla extract
  • For the lime glaze:
  • 1/2 cup powdered sugar
  • 1 tbsp lime juice
  • 1/2 tsp lime zest

Instructions

  1. Preheat the oven to 350°F (175°C). Grease an 8×8-inch baking dish or line it with parchment paper for easy removal.
  2. In a medium bowl, combine the flour, powdered sugar, and salt for the crust. Add the softened butter and mix until the dough comes together.
  3. Press the dough evenly into the bottom of the prepared baking dish to form the crust. Bake for 15-18 minutes, or until the crust is lightly golden brown. Remove from the oven and set aside to cool slightly.
  4. In a separate bowl, whisk together the mango puree, eggs, granulated sugar, flour, salt, and vanilla extract until smooth and well combined.
  5. Pour the mango filling over the partially cooled crust and spread it evenly. Bake for an additional 25-30 minutes, or until the filling is set and a toothpick inserted comes out clean.
  6. Remove from the oven and let the bars cool completely in the baking dish. Once cooled, refrigerate for at least 1 hour to allow the filling to firm up.
  7. For the lime glaze, whisk together the powdered sugar, lime juice, and lime zest in a small bowl until smooth.
  8. Once the bars are chilled and firm, drizzle the lime glaze over the top. Cut into squares and serve.

Notes

  • For an extra tropical twist, you can add shredded coconut to the crust or the filling.
  • These bars are best served chilled and can be stored in an airtight container in the fridge for up to 4 days.
  • If you prefer a thicker glaze, simply add more powdered sugar until you reach your desired consistency.
