- 1 cup lemon juice (freshly squeezed)
- 1/2 cup sugar
- 1 cup mascarpone cheese
- 1 cup heavy cream
- 1/2 cup powdered sugar

- 1 tablespoon lemon zest
- Fresh mint leaves for garnish (optional)
Instructions
- In a small saucepan, combine the lemon juice and sugar. Heat over low heat until the sugar dissolves. Set aside to cool.
- In a large mixing bowl, beat the mascarpone cheese, heavy cream, powdered sugar, and vanilla extract together until smooth and thickened.
- Fold in the lemon zest gently to incorporate it into the cream mixture.
- Quickly dip each ladyfinger into the cooled lemon syrup, ensuring they are moistened but not soggy. Arrange a layer of dipped ladyfingers in the bottom of a serving dish.
- Spread half of the lemon mascarpone cream over the ladyfingers and smooth it out evenly.
- Repeat with another layer of dipped ladyfingers and top with the remaining lemon cream mixture.
- Cover and refrigerate the tiramisu for at least 4 hours or overnight to allow the flavors to meld.
- Before serving, garnish with fresh mint leaves or extra lemon zest if desired.
Notes
- If you prefer a stronger lemon flavor, add a few drops of lemon extract to the cream mixture.
- This dessert can be made up to 2 days ahead of time for best results.
- For a fun variation, add a thin layer of lemon curd between the layers of mascarpone cream.
