- 8 chicken legs (drumsticks)
- 2 tablespoons olive oil
- 2 tablespoons lemon pepper seasoning
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon kosher salt
- 1 tablespoon lemon zest, freshly grated
- 2 tablespoons lemon juice
- 1 tablespoon fresh parsley, chopped
- 1 lemon, thinly sliced
Instructions
- Preheat the oven to 425°F. Lightly grease a sheet pan or baking dish, or line it with parchment paper.
- In a large bowl, combine olive oil, lemon pepper seasoning, garlic powder, onion powder, smoked paprika, kosher salt, lemon zest, and lemon juice.
- Add the chicken legs and toss until evenly coated on all sides.
- Arrange the chicken legs in a single layer on the prepared pan. Tuck the lemon slices around and between the pieces.
- Spoon any remaining seasoning mixture over the tops of the chicken.
- Roast for 40 to 45 minutes, turning once halfway through, until the skin is golden and the thickest part reaches 165°F.
- Let the chicken rest for 5 minutes, then sprinkle with chopped parsley and spoon over any pan juices before serving.
Notes
- Pat the chicken dry before seasoning for better browning.
- Do not overcrowd the pan, or the chicken will steam instead of roast.
- Fresh lemon zest gives the brightest flavor.
- Store leftovers in an airtight container in the refrigerator for up to 4 days.
