- 2 boneless, skinless chicken breasts (halved horizontally into cutlets)
- 1/3 cup all-purpose flour (for dredging)
- 1/2 tsp salt
- 1/2 tsp black pepper
- 2 tbsp olive oil
- 2 tbsp unsalted butter
- 1/2 cup chicken broth (or dry white wine)
- 1/4 cup fresh lemon juice (about 1–2 lemons)
- 1/4 cup capers (drained and rinsed)
- 2 tbsp chopped fresh parsley (for garnish)
- Lemon slices (optional, for garnish)
Instructions
- Place chicken cutlets between plastic wrap and pound to even thickness (about 1/2 inch).
- Mix flour, salt, and pepper in a shallow dish. Dredge chicken in the flour mixture, shaking off excess.
- Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 3–4 minutes per side until golden and cooked through. Transfer to a plate and cover to keep warm.
- Reduce heat to medium. Add butter, chicken broth, lemon juice, and capers to the skillet. Simmer for 3–5 minutes to reduce slightly, scraping up brown bits.
- Return chicken to the skillet and simmer for another 2–3 minutes, spooning sauce over the chicken.
- Garnish with chopped parsley and lemon slices. Serve hot with pasta, rice, or vegetables.
Notes
- For a lighter version, use less butter or substitute with olive oil.
- Use gluten-free flour to make it gluten-free.
- Serve over angel hair pasta, mashed potatoes, or cauliflower rice.
- Capers add a briny kick—omit if desired or replace with green olives.
