Description

Lemon Chicken Piccata is a quick and elegant skillet dinner featuring tender chicken breasts sautéed to golden perfection and simmered in a bright, buttery lemon-caper sauce. Ready in just 30 minutes, it’s perfect for weeknight meals or special occasions.


Ingredients

  • 2 boneless, skinless chicken breasts (halved horizontally into cutlets)
  • 1/3 cup all-purpose flour (for dredging)
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1/2 cup chicken broth (or dry white wine)
  • 1/4 cup fresh lemon juice (about 12 lemons)
  • 1/4 cup capers (drained and rinsed)
  • 2 tbsp chopped fresh parsley (for garnish)
  • Lemon slices (optional, for garnish)

Instructions

  1. Place chicken cutlets between plastic wrap and pound to even thickness (about 1/2 inch).
  2. Mix flour, salt, and pepper in a shallow dish. Dredge chicken in the flour mixture, shaking off excess.
  3. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 3–4 minutes per side until golden and cooked through. Transfer to a plate and cover to keep warm.
  4. Reduce heat to medium. Add butter, chicken broth, lemon juice, and capers to the skillet. Simmer for 3–5 minutes to reduce slightly, scraping up brown bits.
  5. Return chicken to the skillet and simmer for another 2–3 minutes, spooning sauce over the chicken.
  6. Garnish with chopped parsley and lemon slices. Serve hot with pasta, rice, or vegetables.

Notes

  • For a lighter version, use less butter or substitute with olive oil.
  • Use gluten-free flour to make it gluten-free.
  • Serve over angel hair pasta, mashed potatoes, or cauliflower rice.
  • Capers add a briny kick—omit if desired or replace with green olives.
