Description

A light and flavorful baked cod dish infused with fresh lemon, garlic, and herbs. Perfect for a healthy, quick, and delicious weeknight dinner.


Ingredients

  • 4 cod fillets (about 6 oz each)
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 lemon, sliced into rounds
  • 2 tbsp fresh lemon juice
  • 1 tsp dried oregano
  • 1 tsp dried parsley (or 1 tbsp fresh parsley, chopped)
  • Salt and black pepper, to taste

Instructions

  1. Preheat oven to 400°F (200°C) and lightly grease a baking dish.
  2. Pat cod fillets dry and place them in the prepared baking dish.
  3. Drizzle olive oil and lemon juice over the fish, then sprinkle with garlic, oregano, parsley, salt, and pepper.
  4. Lay lemon slices over the top of the fillets.
  5. Bake for 12-15 minutes, or until the fish flakes easily with a fork.
  6. Serve immediately with extra lemon wedges if desired.

Notes

  • Do not overbake the cod as it can become dry quickly.
  • Serve with roasted vegetables, rice, or salad for a complete meal.
  • You can substitute cod with haddock, tilapia, or halibut.
