Description
A light and flavorful baked cod dish infused with fresh lemon, garlic, and herbs. Perfect for a healthy, quick, and delicious weeknight dinner.
Ingredients

- 4 cod fillets (about 6 oz each)
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 lemon, sliced into rounds
- 2 tbsp fresh lemon juice
- 1 tsp dried oregano
- 1 tsp dried parsley (or 1 tbsp fresh parsley, chopped)
- Salt and black pepper, to taste
Instructions
- Preheat oven to 400°F (200°C) and lightly grease a baking dish.
- Pat cod fillets dry and place them in the prepared baking dish.
- Drizzle olive oil and lemon juice over the fish, then sprinkle with garlic, oregano, parsley, salt, and pepper.
- Lay lemon slices over the top of the fillets.
- Bake for 12-15 minutes, or until the fish flakes easily with a fork.
- Serve immediately with extra lemon wedges if desired.
Notes
- Do not overbake the cod as it can become dry quickly.
- Serve with roasted vegetables, rice, or salad for a complete meal.
- You can substitute cod with haddock, tilapia, or halibut.
