Description

Lazy Roasted Vegetables are an easy and delicious way to enjoy a variety of roasted vegetables with minimal effort. Perfect for busy days!


Ingredients

  • 2 cups of carrots, peeled and cut into chunks
  • 2 cups of zucchini, chopped
  • 2 cups of bell peppers, chopped
  • 1 cup of red onion, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place all the chopped vegetables onto a baking sheet.
  3. Drizzle olive oil over the vegetables and toss them to coat evenly.
  4. Sprinkle garlic powder, oregano, salt, and pepper over the vegetables and mix again.
  5. Spread the vegetables in a single layer on the baking sheet.
  6. Roast in the oven for 25-30 minutes or until the vegetables are tender and slightly browned, stirring halfway through the cooking time.
  7. Serve warm and enjoy!

Notes

  • Feel free to use any vegetables you like, such as sweet potatoes, Brussels sprouts, or cauliflower.
  • If you prefer extra crispiness, increase the cooking time by 5-10 minutes, but keep an eye on them to avoid burning.
  • For a Mediterranean twist, add some feta cheese or olives after roasting.
