Ingredients

- 2 cups of carrots, peeled and cut into chunks
- 2 cups of zucchini, chopped
- 2 cups of bell peppers, chopped
- 1 cup of red onion, sliced
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Place all the chopped vegetables onto a baking sheet.
- Drizzle olive oil over the vegetables and toss them to coat evenly.
- Sprinkle garlic powder, oregano, salt, and pepper over the vegetables and mix again.
- Spread the vegetables in a single layer on the baking sheet.
- Roast in the oven for 25-30 minutes or until the vegetables are tender and slightly browned, stirring halfway through the cooking time.
- Serve warm and enjoy!
Notes
- Feel free to use any vegetables you like, such as sweet potatoes, Brussels sprouts, or cauliflower.
- If you prefer extra crispiness, increase the cooking time by 5-10 minutes, but keep an eye on them to avoid burning.
- For a Mediterranean twist, add some feta cheese or olives after roasting.
