Lazy Girl Pecan Pie Bars are the perfect shortcut dessert that brings all the flavor of classic pecan pie with half the effort. With a buttery shortbread crust and a gooey, nutty filling, these bars are sweet, satisfying, and incredibly easy to make — no rolling pin required!

- 1 cup unsalted butter, melted
- 2 cups all-purpose flour
- 1/2 cup powdered sugar
- 1/4 teaspoon salt
- 3 large eggs
- 1 cup light corn syrup
- 1 cup brown sugar, packed
- 1 tablespoon vanilla extract
- 2 cups chopped pecans
Instructions
- Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper or lightly grease it.
- In a mixing bowl, combine melted butter, flour, powdered sugar, and salt to form the crust dough.
- Press the dough evenly into the bottom of the prepared pan. Bake for 15-18 minutes or until lightly golden.
- While the crust bakes, whisk together eggs, corn syrup, brown sugar, and vanilla in a separate bowl until well combined.
- Stir in the chopped pecans.
- Pour the pecan mixture over the hot crust as soon as it comes out of the oven.
- Return to the oven and bake for 25-30 minutes, or until the filling is set and golden brown.
- Let cool completely before cutting into bars.
Notes
- Make sure to pour the filling over the crust while it’s still hot to help the layers bond.
- Use parchment paper for easy removal and clean slicing.
- Bars can be stored in an airtight container for up to 5 days or frozen for longer storage.
