- 4 large Yellow Onions, thinly sliced
- 3 tablespoons Butter
- 1 tablespoon Olive Oil
- 2 cloves Garlic, minced
- 6 cups Beef Broth
- 3 sprigs Fresh Thyme
- 1 Bay Leaf
- Salt and Pepper, to taste
- 8 slices Baguette, toasted
- 1½ cups Gruyère Cheese, shredded
Instructions
- Preheat your broiler to high and prepare oven-safe bowls or ramekins.
- In a large skillet, melt butter and olive oil over medium heat. Add the sliced onions and cook, stirring often, until deeply golden and caramelized, about 25 minutes. Stir in garlic and cook for 1 minute more.
- Transfer the onions to a soup pot or Dutch oven. Add beef broth, thyme, bay leaf, salt, and pepper. Simmer uncovered for 15 minutes.
- Remove bay leaf and thyme sprigs. Ladle the soup into prepared bowls. Top each with a toasted baguette slice and a generous sprinkle of cheese.
- Place the bowls on a baking sheet and broil for 2–3 minutes until cheese is melted and bubbling.
- Garnish with extra thyme if desired and serve hot.
Notes
- Use yellow onions for optimal sweetness and depth.
- Toasting the bread beforehand helps prevent sogginess.
- Gruyère is traditional, but Swiss or mozzarella work well too.
- Let the soup sit a few minutes before broiling to deepen the flavor.
