Description

Tender golden seared chicken simmered in a rich garlic cream sauce with fresh spinach and parmesan cheese. This comforting skillet dinner is quick, flavorful, and perfect for busy weeknights.


Ingredients

  • 4 boneless skinless chicken breasts (about 680 grams total)
  • 3 cups fresh spinach leaves (about 90 grams)
  • 1 cup heavy cream (240 milliliters)
  • 1 cup grated parmesan cheese (about 100 grams)
  • 3 garlic cloves, minced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning

Instructions

  1. Heat a large skillet over medium heat and add the olive oil until shimmering.
  2. Season the chicken breasts on both sides with salt, black pepper, and Italian seasoning.
  3. Place the chicken in the hot skillet and sear for 5 to 6 minutes per side until golden brown and cooked through. Remove and set aside.
  4. In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant.
  5. Pour in the heavy cream, stirring gently and scraping up any browned bits from the bottom of the pan.
  6. Add the fresh spinach and allow it to wilt into the cream sauce.
  7. Reduce heat to low and stir in the grated parmesan cheese until melted and smooth.
  8. Return the chicken to the skillet and simmer for 5 minutes to allow the flavors to meld.
  9. Taste and adjust seasoning if needed, then serve warm with sauce spooned over the chicken.

Notes

  • Use room temperature chicken for more even cooking.
  • Do not boil the cream aggressively, keep it at a gentle simmer to prevent separation.
  • If the sauce becomes too thick, add a small splash of warm cream to loosen it.
  • Freshly grated parmesan melts more smoothly than pre-shredded varieties.
