- 4 boneless skinless chicken breasts (about 680 grams total)
- 3 cups fresh spinach leaves (about 90 grams)
- 1 cup heavy cream (240 milliliters)
- 1 cup grated parmesan cheese (about 100 grams)
- 3 garlic cloves, minced
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon Italian seasoning
Instructions
- Heat a large skillet over medium heat and add the olive oil until shimmering.
- Season the chicken breasts on both sides with salt, black pepper, and Italian seasoning.
- Place the chicken in the hot skillet and sear for 5 to 6 minutes per side until golden brown and cooked through. Remove and set aside.
- In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant.
- Pour in the heavy cream, stirring gently and scraping up any browned bits from the bottom of the pan.
- Add the fresh spinach and allow it to wilt into the cream sauce.
- Reduce heat to low and stir in the grated parmesan cheese until melted and smooth.
- Return the chicken to the skillet and simmer for 5 minutes to allow the flavors to meld.
- Taste and adjust seasoning if needed, then serve warm with sauce spooned over the chicken.
Notes
- Use room temperature chicken for more even cooking.
- Do not boil the cream aggressively, keep it at a gentle simmer to prevent separation.
- If the sauce becomes too thick, add a small splash of warm cream to loosen it.
- Freshly grated parmesan melts more smoothly than pre-shredded varieties.
