Description

This Lazy Baked Chicken and Rice is a comforting one-pan dinner made with juicy bone-in chicken thighs baked over fluffy rice infused with garlic, herbs, and savory broth. It is simple to prepare, budget-friendly, and perfect for busy weeknights.

Ingredients

Scale
  • 6 bone-in skin-on chicken thighs (about 900 grams)
  • 1 1/2 cups long grain white rice (about 285 grams)
  • 3 cups chicken broth (about 720 milliliters)
  • 2 tablespoons olive oil (about 30 milliliters)
  • 3 garlic cloves, minced
  • 1 medium yellow onion, finely chopped
  • 2 medium carrots, diced
  • 1 cup frozen peas (about 150 grams)
  • 1 teaspoon dried thyme
  • 1 teaspoon salt, or to taste
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat Your Equipment: Preheat the oven to 180 degrees Celsius, which is 350 degrees Fahrenheit.
  2. Combine Ingredients: In a large bowl, mix the long grain white rice, chicken broth, olive oil, minced garlic, chopped onion, diced carrots, dried thyme, salt, and black pepper until well combined.
  3. Prepare Your Cooking Vessel: Lightly grease a 9 by 13 inch baking dish to prevent sticking.
  4. Assemble the Dish: Pour the rice mixture into the baking dish. Nestle the chicken thighs skin side up on top of the rice, ensuring the rice is mostly submerged in the liquid.
  5. Cook to Perfection: Cover the dish tightly with foil and bake for 45 minutes. Remove the foil, gently stir in the frozen peas around the chicken, then bake uncovered for another 15 minutes until the rice is tender and the chicken reaches an internal temperature of 75 degrees Celsius or 165 degrees Fahrenheit.
  6. Finishing Touches: Let the dish rest for 5 to 10 minutes before serving to allow the rice to absorb any remaining moisture.
  7. Serve and Enjoy: Fluff the rice gently with a fork and serve each portion topped with a chicken thigh.

Notes

  • Rinse the rice briefly under cold water before mixing for fluffier grains.
  • Pat the chicken dry before baking to help the skin crisp slightly.
  • If the rice is slightly firm at the end of cooking, cover and bake for an additional 5 minutes.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days.
