Description

Comforting lasagna roll-ups filled with creamy ricotta, spinach, and herbs, baked in rich tomato sauce and topped with melted cheese for a cozy and satisfying meal.


Ingredients

  • 12 lasagna noodles
  • 2 cups ricotta cheese
  • 2 cups chopped fresh spinach
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated parmesan cheese
  • 1 large egg
  • 3 cups tomato sauce
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 180°C and bring a large pot of salted water to a boil.
  2. Cook the lasagna noodles until slightly underdone, then drain and lay flat.
  3. In a mixing bowl, combine ricotta cheese, chopped spinach, half of the mozzarella, parmesan cheese, egg, minced garlic, oregano, basil, salt, and black pepper until smooth.
  4. Spread a thin layer of tomato sauce at the bottom of a baking dish.
  5. Lay each noodle flat, spread an even layer of the filling, roll tightly, and place seam side down in the dish.
  6. Pour the remaining tomato sauce over the rolls and sprinkle with the remaining mozzarella cheese.
  7. Bake for 25 minutes until the cheese is melted and bubbly.
  8. Let the dish rest for 5 to 10 minutes before serving.
  9. Serve warm and enjoy.

  • Slightly undercook noodles to make rolling easier.
  • Use thick tomato sauce to avoid excess moisture.
