- 1 1/2 cups graham cracker crumbs
- 1/3 cup granulated sugar
- 6 tablespoons unsalted butter, melted
- 2 (14 oz) cans sweetened condensed milk
- 1/2 cup sour cream
- 3/4 cup key lime juice (fresh or bottled)
- Zest of 1 lime (optional, for extra flavor)
Instructions
- Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper, leaving an overhang for easy removal.
- In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Press mixture evenly into the bottom of the prepared pan to form the crust.
- Bake the crust for 8–10 minutes. Remove and let cool slightly.
- In a large bowl, whisk together sweetened condensed milk, sour cream, lime juice, and lime zest until smooth.
- Pour the filling over the cooled crust and spread evenly.
- Bake for 15–18 minutes, or until the center is just set (it should still jiggle slightly).
- Cool completely at room temperature, then chill in the refrigerator for at least 2 hours before slicing.
- Cut into bars and garnish with whipped cream or lime slices if desired.
Notes
- For best results, use key lime juice—but regular lime juice works too.
- Store leftovers in an airtight container in the fridge for up to 5 days.
- Freeze for up to 2 months; thaw overnight in the fridge before serving.
