Ingredients

  • 4 oz cream cheese (softened)
  • 2 tbsp butter (softened)
  • 1/2 cup almond flour
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup powdered erythritol
  • 1 tsp vanilla extract
  • 2 oz unsweetened chocolate (melted)
  • Optional: extra cocoa powder for dusting

Instructions

  1. Allow cream cheese and butter to come to room temperature for easy mixing.
  2. In a bowl, beat together the softened cream cheese and butter until smooth and creamy.
  3. Add almond flour, cocoa powder, powdered erythritol, vanilla extract, and melted chocolate. Mix until a thick dough forms.
  4. Chill the mixture in the fridge for 15–20 minutes until firm enough to shape.
  5. Scoop small portions of dough and roll into balls using your hands.
  6. Optional: roll each truffle in cocoa powder or chopped nuts.
  7. Place truffles on a parchment-lined tray and chill again for 15 minutes before serving.
