Description

A rich, buttery twist on a classic Irish favorite, this Keto Colcannon swaps potatoes for creamy cauliflower while keeping all the comforting flavor. Perfect as a low-carb side dish or cozy main.


Ingredients

  • 1 medium head cauliflower, cut into florets
  • 2 cups green cabbage, thinly shredded
  • 4 tablespoons butter
  • 1/4 cup heavy cream
  • 2 cloves garlic, minced
  • 3 stalks green onions, finely sliced
  • 1 teaspoon salt, or to taste
  • 1/2 teaspoon black pepper, freshly ground

Instructions

  1. Set up a steamer and steam the cauliflower florets until tender, about 8 to 10 minutes.
  2. In a skillet over medium heat, sauté minced garlic and shredded cabbage in 2 tablespoons of butter until softened.
  3. In a food processor or mixing bowl, combine steamed cauliflower, remaining butter, heavy cream, salt, and pepper. Blend or mash until smooth.
  4. Fold in the sautéed cabbage and green onions into the cauliflower mash.
  5. Return the mixture to the skillet and warm over low heat for 2 to 3 minutes to meld the flavors.
  6. Adjust seasoning to taste and top with an extra pat of butter if desired.
  7. Serve warm and enjoy.
