Ingredients

- 2 large russet potatoes, peeled and chopped
- 2 cups chopped kale
- 3 tablespoons unsalted butter
- 1/3 cup whole milk
- 3 green onions, finely sliced
- 2 garlic cloves, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 large eggs
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Boil potatoes in salted water until tender. Add kale in the last 2 minutes. Drain well.
- Mash the potatoes and kale together. Stir in butter, milk, green onions, garlic, salt, and pepper.
- Let the mixture cool slightly, then add the beaten eggs and mix until fully combined.
- Scoop 2-tablespoon portions of the mixture onto the baking sheet, forming small puffs.
- Bake for 20–25 minutes, or until the tops are golden and crisp.
- Cool slightly, garnish with extra green onions if desired, and serve warm.
