Description

These golden Kale Colcannon Puffs blend creamy mashed potatoes with vibrant kale, garlic, and green onions, then bake into crispy, fluffy bites perfect for any occasion.


Ingredients

Scale
  • 2 large russet potatoes, peeled and chopped
  • 2 cups chopped kale
  • 3 tablespoons unsalted butter
  • 1/3 cup whole milk
  • 3 green onions, finely sliced
  • 2 garlic cloves, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 large eggs

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Boil potatoes in salted water until tender. Add kale in the last 2 minutes. Drain well.
  3. Mash the potatoes and kale together. Stir in butter, milk, green onions, garlic, salt, and pepper.
  4. Let the mixture cool slightly, then add the beaten eggs and mix until fully combined.
  5. Scoop 2-tablespoon portions of the mixture onto the baking sheet, forming small puffs.
  6. Bake for 20–25 minutes, or until the tops are golden and crisp.
  7. Cool slightly, garnish with extra green onions if desired, and serve warm.
