Jiffy Cornbread Taco Bake is a delicious, easy-to-make casserole that combines the flavors of a taco with the comfort of cornbread. Using Jiffy cornbread mix, seasoned ground beef, and taco toppings, this dish is perfect for a family dinner or a potluck.

- 1 box Jiffy cornbread mix
- 1/3 cup milk
- 1 egg
- 1 lb ground beef
- 1 packet taco seasoning
- 1/2 cup water
- 1 can diced tomatoes with green chilies (drained)
- 1 cup shredded cheddar cheese
- 1 cup sour cream
- Optional toppings: sliced green onions, chopped cilantro, salsa, jalapeños
Instructions
- Preheat the oven to 400°F (200°C) and grease a 9×13-inch baking dish.
- Prepare the Jiffy cornbread mix according to the instructions on the box, using milk and egg, and set aside.
- In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
- Stir in the taco seasoning and water, and simmer for 5 minutes. Add the drained diced tomatoes with green chilies and cook for an additional 2 minutes. Remove from heat.
- Spread the taco beef mixture evenly in the prepared baking dish. Pour the prepared cornbread batter over the top of the beef mixture and spread it out evenly.
- Bake for 20-25 minutes, or until the cornbread is golden brown and cooked through. You can check by inserting a toothpick into the center—if it comes out clean, the cornbread is done.
- Remove from the oven and sprinkle shredded cheddar cheese over the top. Return to the oven and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
- Let the dish cool for a few minutes before serving. Top with sour cream and optional toppings like sliced green onions, cilantro, salsa, or jalapeños.
Notes
- You can substitute the ground beef with ground turkey or chicken for a lighter version.
- If you prefer a spicier dish, add more diced jalapeños or a dash of hot sauce to the taco meat.
- Leftovers can be stored in the refrigerator for up to 3 days and can be reheated in the microwave or oven.
