Description

Jiffy Cornbread Taco Bake is a delicious, easy-to-make casserole that combines the flavors of a taco with the comfort of cornbread. Using Jiffy cornbread mix, seasoned ground beef, and taco toppings, this dish is perfect for a family dinner or a potluck.


Ingredients

  • 1 box Jiffy cornbread mix
  • 1/3 cup milk
  • 1 egg
  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1/2 cup water
  • 1 can diced tomatoes with green chilies (drained)
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • Optional toppings: sliced green onions, chopped cilantro, salsa, jalapeños

Instructions

  1. Preheat the oven to 400°F (200°C) and grease a 9×13-inch baking dish.
  2. Prepare the Jiffy cornbread mix according to the instructions on the box, using milk and egg, and set aside.
  3. In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
  4. Stir in the taco seasoning and water, and simmer for 5 minutes. Add the drained diced tomatoes with green chilies and cook for an additional 2 minutes. Remove from heat.
  5. Spread the taco beef mixture evenly in the prepared baking dish. Pour the prepared cornbread batter over the top of the beef mixture and spread it out evenly.
  6. Bake for 20-25 minutes, or until the cornbread is golden brown and cooked through. You can check by inserting a toothpick into the center—if it comes out clean, the cornbread is done.
  7. Remove from the oven and sprinkle shredded cheddar cheese over the top. Return to the oven and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
  8. Let the dish cool for a few minutes before serving. Top with sour cream and optional toppings like sliced green onions, cilantro, salsa, or jalapeños.

Notes

  • You can substitute the ground beef with ground turkey or chicken for a lighter version.
  • If you prefer a spicier dish, add more diced jalapeños or a dash of hot sauce to the taco meat.
  • Leftovers can be stored in the refrigerator for up to 3 days and can be reheated in the microwave or oven.
