- 4 large boneless, skinless chicken breasts
- 3 medium jalapeños, seeded and finely diced
- 8 oz cream cheese, softened
- 1 cup shredded cheddar cheese
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp paprika
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp olive oil
Instructions
- Preheat oven to 375°F (190°C) and lightly grease a baking dish.
- In a mixing bowl, combine cream cheese, cheddar cheese, jalapeños, garlic powder, onion powder, paprika, salt, and black pepper until smooth.
- Heat olive oil in a skillet over medium heat.
- Slice each chicken breast horizontally to create a pocket, stuff with cheese mixture, and secure with toothpicks.
- Sear chicken in skillet for 2–3 minutes per side until golden, then transfer to baking dish.
- Bake for 20–25 minutes or until chicken reaches 165°F (74°C).
- Let rest for 5 minutes before slicing and serving.
Notes
- Use room-temperature cream cheese for easy mixing.
- For less heat, use poblano peppers instead of jalapeños.
- Do not overstuff chicken to avoid filling leakage.
