- 1 (20 oz) package cheese tortellini, refrigerated or frozen
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1 cup bell peppers, diced
- 1/2 cup red onion, finely chopped
- 1/2 cup black olives, sliced
- 1/2 cup Parmesan cheese, grated
- 3/4 cup Italian dressing (store-bought or homemade)
- 2 tbsp fresh basil, chopped
- Salt and black pepper, to taste
Instructions
- Cook the tortellini according to the package directions. Drain and rinse under cold water to cool.
- In a large bowl, combine the cooled tortellini, cherry tomatoes, cucumber, bell peppers, red onion, and black olives.
- Pour the Italian dressing over the mixture and toss gently to coat.
- Add Parmesan cheese and chopped basil, mixing until evenly distributed.
- Season with salt and pepper to taste. Refrigerate for at least 30 minutes before serving for best flavor.

- You can add cooked chicken, pepperoni, or salami for a heartier salad.
