Description

Italian Tortellini & Veggie Pasta Salad is a vibrant and flavorful dish featuring cheese-filled tortellini tossed with fresh vegetables, zesty Italian dressing, and savory Parmesan cheese. Perfect for picnics, potlucks, or a light lunch.


Ingredients

  • 1 (20 oz) package cheese tortellini, refrigerated or frozen
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 cup bell peppers, diced
  • 1/2 cup red onion, finely chopped
  • 1/2 cup black olives, sliced
  • 1/2 cup Parmesan cheese, grated
  • 3/4 cup Italian dressing (store-bought or homemade)
  • 2 tbsp fresh basil, chopped
  • Salt and black pepper, to taste

Instructions

  1. Cook the tortellini according to the package directions. Drain and rinse under cold water to cool.
  2. In a large bowl, combine the cooled tortellini, cherry tomatoes, cucumber, bell peppers, red onion, and black olives.
  3. Pour the Italian dressing over the mixture and toss gently to coat.
  4. Add Parmesan cheese and chopped basil, mixing until evenly distributed.
  5. Season with salt and pepper to taste. Refrigerate for at least 30 minutes before serving for best flavor.

Notes

  • You can add cooked chicken, pepperoni, or salami for a heartier salad.
  • Use tri-color tortellini for an even more colorful presentation.
