- 1 pound Italian sausage links, sliced
- 1 cup white rice, uncooked
- 1 medium red bell pepper, diced
- 1 medium green bell pepper, diced
- 1 small yellow onion, chopped
- 3 garlic cloves, minced
- 1 (14.5 oz) can diced tomatoes, with juices
- 2 cups chicken broth
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon salt (or to taste)
- 1/4 teaspoon black pepper (or to taste)
Instructions
- Place a large skillet over medium-high heat and add 1 tablespoon olive oil.
- Add sliced sausage and cook until browned on both sides, about 5–6 minutes. Remove and set aside.
- In the same skillet, add remaining olive oil. Sauté onions and bell peppers for 4–5 minutes until softened. Add garlic and cook for 30 seconds more.
- Stir in uncooked rice and toast for 2 minutes.
- Add diced tomatoes, chicken broth, oregano, basil, salt, and pepper. Return sausage to skillet and stir well.
- Bring to a gentle simmer, cover, and reduce heat to low. Cook for 18–20 minutes, or until rice is tender and liquid is absorbed.
- Remove from heat and let rest covered for 5 minutes.
- Fluff rice and serve hot. Garnish with fresh parsley or cheese if desired.
Notes
- To make it spicier, use hot Italian sausage and a pinch of red pepper flakes.
- Letting the skillet rest after cooking helps the rice finish steaming and improves texture.
- Great with a side salad or garlic bread for a complete meal.
