Description

Ingredients

  • 1 pound Italian sausage links, sliced
  • 1 cup white rice, uncooked
  • 1 medium red bell pepper, diced
  • 1 medium green bell pepper, diced
  • 1 small yellow onion, chopped
  • 3 garlic cloves, minced
  • 1 (14.5 oz) can diced tomatoes, with juices
  • 2 cups chicken broth
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper (or to taste)

Instructions

  1. Place a large skillet over medium-high heat and add 1 tablespoon olive oil.
  2. Add sliced sausage and cook until browned on both sides, about 5–6 minutes. Remove and set aside.
  3. In the same skillet, add remaining olive oil. Sauté onions and bell peppers for 4–5 minutes until softened. Add garlic and cook for 30 seconds more.
  4. Stir in uncooked rice and toast for 2 minutes.
  5. Add diced tomatoes, chicken broth, oregano, basil, salt, and pepper. Return sausage to skillet and stir well.
  6. Bring to a gentle simmer, cover, and reduce heat to low. Cook for 18–20 minutes, or until rice is tender and liquid is absorbed.
  7. Remove from heat and let rest covered for 5 minutes.
  8. Fluff rice and serve hot. Garnish with fresh parsley or cheese if desired.

Notes

  • To make it spicier, use hot Italian sausage and a pinch of red pepper flakes.
  • Letting the skillet rest after cooking helps the rice finish steaming and improves texture.
  • Great with a side salad or garlic bread for a complete meal.
