Description

Instant Pot Crack Chicken is a creamy, cheesy, and savory dish made with tender shredded chicken, crispy bacon, and ranch seasoning. It’s a family favorite comfort food that comes together quickly and can be served on buns, over rice, or with veggies.


Ingredients

  • 8 slices bacon, cut into 1/2–inch pieces
  • 3/4 cup chicken broth, divided
  • 3 pounds boneless skinless chicken breast
  • 12 ounces cream cheese, cut into 1-inch cubes
  • 1 (1-ounce) package ranch seasoning mix
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon kosher salt
  • 1 cup shredded cheddar cheese
  • Hamburger buns, for serving
  • Chives, for garnish

Instructions

  1. Set the Instant Pot to sauté mode. Cook the bacon until crispy, then transfer to a paper towel-lined plate. Drain excess grease, leaving about 1 tablespoon in the pot.
  2. Pour 1/4 cup of chicken broth into the pot and scrape up any browned bits from the bottom.
  3. Add the chicken breasts, cream cheese cubes, ranch seasoning mix, salt, pepper, and remaining chicken broth to the pot.
  4. Close the lid, set the valve to sealing, and cook on high pressure for 15 minutes. Allow pressure to release naturally for 10 minutes, then quick release any remaining pressure.
  5. Remove the chicken and shred with two forks. Return shredded chicken to the pot and stir until well combined with the sauce.
  6. Add cheddar cheese and stir until melted and creamy. Stir in the cooked bacon.
  7. Serve warm on hamburger buns, garnished with fresh chives.

Notes

  • This dish can also be served over rice, pasta, or with lettuce wraps for a low-carb option.
  • Use chicken thighs for an even juicier version.
  • Leftovers can be refrigerated for up to 4 days or frozen for up to 2 months.
