Description

This Instant Pot Chicken Breast and Rice is a cozy, one-pot meal made with tender chicken, fluffy rice, parmesan, and peas. It’s creamy, comforting, and ready in under 30 minutes — the perfect weeknight dinner!


Ingredients

  • 1 pound boneless skinless chicken breasts, cut into 1” pieces
  • 1 teaspoon Kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 2 tablespoons olive oil
  • 3 1/2 cups chicken broth
  • 1 1/2 cups white rice, rinsed
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 cup grated parmesan cheese
  • 1 cup frozen peas

Instructions

  1. Season the chicken pieces with salt and pepper.
  2. Set the Instant Pot to sauté mode and heat the olive oil. Add the chicken and cook until lightly browned, about 3–4 minutes (it doesn’t need to be fully cooked through). Turn off sauté mode.
  3. Add the chicken broth, rinsed rice, garlic powder, and onion powder. Stir to combine, making sure the rice is submerged in liquid.
  4. Close the lid, set the valve to sealing, and cook on high pressure for 8 minutes.
  5. Allow a natural release for 10 minutes, then carefully do a quick release of any remaining pressure.
  6. Stir in the parmesan cheese and frozen peas until creamy and well combined. Let sit for 2–3 minutes to heat the peas through.
  7. Adjust seasoning if needed and serve warm.

Notes

  • Be sure to rinse the rice well to prevent sticking or clumping.
  • For creamier rice, add 1/4 cup heavy cream or a splash of milk when stirring in the parmesan.
  • This recipe works best with white rice; brown rice requires longer cooking time.
  • Leftovers can be stored in the fridge for up to 3 days and reheated with a splash of broth.
