- 1.5 pounds boneless, skinless chicken thighs
- 2 cups cooked white rice
- 2 tablespoons Dijon mustard
- 1 tablespoon whole grain mustard
- 3 tablespoons honey
- 1 tablespoon soy sauce
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1.5 cups broccoli florets, steamed
- 1 cup carrot ribbons
Instructions
- Heat a large skillet over medium heat and warm a saucepan of water for rice if not pre-cooked.
- In a bowl, whisk together honey, Dijon mustard, whole grain mustard, soy sauce, and garlic.
- Heat olive oil in skillet, add chicken pieces, season with salt and pepper, and brown on all sides for 5–6 minutes.
- Pour in the honey mustard mixture and simmer for 8–10 minutes, until the sauce thickens and coats the chicken.
- Steam broccoli and carrots during final minutes of cooking.
- Portion cooked rice into bowls, add chicken, and place vegetables on the side.
- Drizzle extra sauce over top and serve warm.
