Description

Sticky-sweet honey mustard chicken served over fluffy white rice with steamed broccoli and carrot ribbons. A quick, comforting meal packed with flavor and ready in just 30 minutes.


Ingredients

  • 1.5 pounds boneless, skinless chicken thighs
  • 2 cups cooked white rice
  • 2 tablespoons Dijon mustard
  • 1 tablespoon whole grain mustard
  • 3 tablespoons honey
  • 1 tablespoon soy sauce
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1.5 cups broccoli florets, steamed
  • 1 cup carrot ribbons

Instructions

  1. Heat a large skillet over medium heat and warm a saucepan of water for rice if not pre-cooked.
  2. In a bowl, whisk together honey, Dijon mustard, whole grain mustard, soy sauce, and garlic.
  3. Heat olive oil in skillet, add chicken pieces, season with salt and pepper, and brown on all sides for 5–6 minutes.
  4. Pour in the honey mustard mixture and simmer for 8–10 minutes, until the sauce thickens and coats the chicken.
  5. Steam broccoli and carrots during final minutes of cooking.
  6. Portion cooked rice into bowls, add chicken, and place vegetables on the side.
  7. Drizzle extra sauce over top and serve warm.

Notes

  • Use both Dijon and whole grain mustard for a balanced flavor and texture.
  • Adjust sweetness by adding lemon juice or more soy sauce if needed.
