- 2 cups baby carrots or sliced carrots
- 1 zucchini, sliced (optional)

Instructions
- Preheat oven to 400°F (200°C) or heat grill to medium-high.
- In a small bowl, whisk together Dijon mustard, honey, olive oil, garlic, thyme, salt, and pepper.
- Cut 4 large sheets of aluminum foil. Place a chicken breast in the center of each sheet.
- Divide potatoes, carrots, and zucchini evenly among the foil packets around the chicken.
- Spoon the honey mustard sauce evenly over the chicken and veggies.
- Fold the sides of the foil over the chicken and seal tightly to form packets.
- Bake for 25–30 minutes, or grill for 20–25 minutes, until chicken is cooked through and vegetables are tender.
- Carefully open packets (watch for steam), garnish with parsley, and serve.
