Description

A fresh, zesty, and protein-packed dish featuring creamy avocados stuffed with tender honey lime chicken and topped with a vibrant corn salsa. Perfect for a light lunch or summer dinner, this no-cook meal is full of flavor and nutrition.


Ingredients

  • 2 large ripe avocados, halved and pitted
  • 1 cup cooked shredded chicken (grilled or rotisserie)
  • 1 tablespoon honey
  • 1 tablespoon lime juice
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste
  • For the corn salsa:
  • 1 cup corn kernels (fresh, canned, or thawed frozen)
  • 1/2 cup cherry tomatoes, diced
  • 1/4 cup red onion, finely chopped
  • 1 tablespoon fresh cilantro, chopped
  • 1 tablespoon lime juice
  • Salt to taste

Instructions

  1. In a small bowl, mix shredded chicken with honey, lime juice, chili powder, salt, and pepper. Set aside to marinate for 5–10 minutes.
  2. In a separate bowl, combine corn, tomatoes, red onion, cilantro, lime juice, and a pinch of salt to make the salsa. Toss gently.
  3. Scoop a little of the avocado flesh out to create a larger cavity (optional), and chop the scooped-out avocado to mix back in with the chicken if desired.
  4. Fill each avocado half with honey lime chicken mixture.
  5. Spoon corn salsa generously over the top of the stuffed avocados.
  6. Serve immediately, garnished with extra cilantro or a lime wedge if desired.

Notes

  • Use leftover grilled chicken for quick prep.
  • For a spicier version, add diced jalapeños or a dash of hot sauce to the salsa.
  • Serve with tortilla chips or over a bed of greens for a more filling meal.
  • Best served fresh, as avocados brown quickly after cutting.
