- 2 large ripe avocados, halved and pitted
- 1 cup cooked shredded chicken (grilled or rotisserie)
- 1 tablespoon honey
- 1 tablespoon lime juice
- 1/2 teaspoon chili powder
- Salt and pepper to taste
- For the corn salsa:
- 1 cup corn kernels (fresh, canned, or thawed frozen)
- 1/2 cup cherry tomatoes, diced
- 1/4 cup red onion, finely chopped
- 1 tablespoon fresh cilantro, chopped
- 1 tablespoon lime juice
- Salt to taste
Instructions
- In a small bowl, mix shredded chicken with honey, lime juice, chili powder, salt, and pepper. Set aside to marinate for 5–10 minutes.
- In a separate bowl, combine corn, tomatoes, red onion, cilantro, lime juice, and a pinch of salt to make the salsa. Toss gently.
- Scoop a little of the avocado flesh out to create a larger cavity (optional), and chop the scooped-out avocado to mix back in with the chicken if desired.
- Fill each avocado half with honey lime chicken mixture.
- Spoon corn salsa generously over the top of the stuffed avocados.
- Serve immediately, garnished with extra cilantro or a lime wedge if desired.

- Use leftover grilled chicken for quick prep.
- For a spicier version, add diced jalapeños or a dash of hot sauce to the salsa.
