Description

Homemade Peanut Butter Cup Stuffed Cookies are soft, chewy chocolate chip cookies with a surprise peanut butter cup center. Perfectly indulgent, these cookies combine two classic treats in one delicious bite.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 cups semi-sweet chocolate chips
  • 24 mini peanut butter cups, unwrapped

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add eggs one at a time, beating well after each addition. Stir in vanilla.
  4. In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to wet ingredients, mixing just until combined.
  5. Fold in chocolate chips.
  6. Using a cookie scoop, form a ball of dough, flatten slightly, and place a mini peanut butter cup in the center. Wrap the dough around it and roll into a smooth ball.
  7. Place on prepared baking sheet, spacing 2 inches apart. Repeat with remaining dough and peanut butter cups.
  8. Bake for 10–12 minutes, or until edges are golden and centers are just set. Cool on pan for 5 minutes before transferring to wire rack.
