Homemade Peanut Butter Cup Stuffed Cookies are soft, chewy chocolate chip cookies with a surprise peanut butter cup center. Perfectly indulgent, these cookies combine two classic treats in one delicious bite.

- 1 cup unsalted butter, softened
- 1 cup brown sugar, packed
- 1/2 cup granulated sugar
- 2 large eggs
- 2 tsp vanilla extract
- 2 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 2 cups semi-sweet chocolate chips
- 24 mini peanut butter cups, unwrapped
Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
- Add eggs one at a time, beating well after each addition. Stir in vanilla.
- In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to wet ingredients, mixing just until combined.
- Fold in chocolate chips.
- Using a cookie scoop, form a ball of dough, flatten slightly, and place a mini peanut butter cup in the center. Wrap the dough around it and roll into a smooth ball.
- Place on prepared baking sheet, spacing 2 inches apart. Repeat with remaining dough and peanut butter cups.
- Bake for 10–12 minutes, or until edges are golden and centers are just set. Cool on pan for 5 minutes before transferring to wire rack.
Notes
- Use chilled dough to help maintain shape during baking.
- Try freezing peanut butter cups beforehand to make stuffing easier.
- Store in an airtight container for up to 5 days, or freeze for longer storage.
