- 3 cups fresh peaches, peeled and chopped
- 1 cup granulated sugar, divided
- 2 cups heavy cream
- 1 cup whole milk
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice (optional, for brightness)
- Pinch of salt
Instructions
- In a medium bowl, toss the chopped peaches with 1/2 cup sugar. Let sit for 30 minutes to macerate and release juices.
- Blend half of the peaches into a puree; leave the rest chunky for texture.
- In a large bowl, combine the peach puree, remaining sugar, heavy cream, milk, vanilla, lemon juice, and salt. Stir until the sugar is dissolved.
- Chill the mixture in the refrigerator for at least 2 hours or until cold.
- Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions (usually 20–25 minutes).
- During the last few minutes of churning, add the reserved chopped peaches.
- Transfer to a lidded container and freeze for at least 2–4 hours, or until firm.
Notes
- No ice cream maker? Freeze the mixture in a shallow dish and stir every 30 minutes until smooth and creamy (about 3 hours).
- Use very ripe peaches for the best flavor and natural sweetness.
- Try adding a touch of cinnamon or almond extract for a flavor twist.
