Description

Creamy, fluffy mashed potatoes loaded with melted cheddar cheese, tangy sour cream, savory turkey bacon, and fresh green onions. This comforting side dish is rich, satisfying, and perfect for family dinners or special gatherings.


Ingredients

  • 2 pounds russet potatoes, peeled and cut into chunks
  • 4 tablespoons unsalted butter, softened
  • 1 cup whole milk, warmed
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 6 slices turkey bacon, cooked and crumbled
  • 3 tablespoons green onions, finely chopped
  • 1 teaspoon salt, or to taste
  • 1/2 teaspoon black pepper

Instructions

  1. Bring a large pot of salted water to a boil.
  2. Add the peeled and chopped potatoes and cook for 15 to 20 minutes, until fork tender.
  3. Drain the potatoes thoroughly and return them to the warm pot.
  4. Warm the butter and milk together in a small saucepan.
  5. Mash the potatoes gently until mostly smooth.
  6. Pour in the warm milk and butter, then stir in the sour cream, salt, and black pepper until creamy.
  7. Fold in half of the shredded cheddar cheese until melted.
  8. Transfer to a serving bowl and top with the remaining cheese, crumbled turkey bacon, and chopped green onions.
  9. Serve warm and enjoy.
