- 3 cups all-purpose flour
- 1/2 cup cold butter, cubed
- 1 teaspoon salt
- 1 large egg
- 1/2 cup cold water
- 1 pound ground beef
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1/2 teaspoon ground cumin
- 1/3 cup green olives, chopped
- 1 hard-boiled egg, chopped
- 1 egg, beaten (for egg wash)
Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a large bowl, mix flour and salt. Cut in cold butter until crumbly. Add egg and cold water, mixing until a dough forms. Chill for 30 minutes.
- Heat a skillet over medium heat. Sauté onion and garlic until soft. Add ground beef, paprika, cumin, and salt. Cook until browned. Stir in olives and chopped egg. Let cool.
- Roll out dough on a floured surface. Cut into circles. Spoon filling onto each circle, fold over, and crimp the edges with a fork.
- Place empanadas on the baking sheet. Brush tops with beaten egg.
- Bake for 25–30 minutes, until golden brown. Let cool slightly before serving.
Notes
- Chilling the dough helps create a flakier crust.
- You can freeze unbaked empanadas for later baking.
- Serve with chimichurri or your favorite dipping sauce.
