Ingredients
Scale
- 1 and 1/2 cups old-fashioned oats
- 1 cup whole wheat flour
- 1/2 cup unsalted butter, melted
- 1/3 cup brown sugar
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon pure vanilla extract
- 1 and 1/2 cups fresh blueberries
- 1 tablespoon lemon juice
- 2 tablespoons honey
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
- In a large bowl, mix oats, flour, brown sugar, baking soda, and salt. Stir in melted butter and vanilla until crumbly and well combined.
- Set aside 3/4 cup of the oat mixture. Press the rest into the pan to form the crust.

- Spread blueberry filling over the crust. Sprinkle reserved oat mixture on top.
- Bake for 25–30 minutes or until golden and bubbling. Let cool completely before cutting into bars.
Notes
- Let bars cool fully before slicing to prevent crumbling.
- Use parchment paper for easy removal and clean edges.
- You can use frozen blueberries, no need to thaw first.
- Swap honey with maple syrup or agave if preferred.
