Description

These homemade blueberry Nutri Grain bars are soft, chewy, and filled with a naturally sweet blueberry center. Perfect for breakfast, snacking, or packing in lunchboxes, they’re a healthier and tastier version of the classic store-bought favorite.


Ingredients

  • 1 and 1/2 cups old-fashioned oats
  • 1 cup whole wheat flour
  • 1/2 cup unsalted butter, melted
  • 1/3 cup brown sugar
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon pure vanilla extract
  • 1 and 1/2 cups fresh blueberries
  • 1 tablespoon lemon juice
  • 2 tablespoons honey

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
  2. In a large bowl, mix oats, flour, brown sugar, baking soda, and salt. Stir in melted butter and vanilla until crumbly and well combined.
  3. Set aside 3/4 cup of the oat mixture. Press the rest into the pan to form the crust.
  4. In a small saucepan, cook blueberries, lemon juice, and honey over medium heat for 8–10 minutes until thickened.
  5. Spread blueberry filling over the crust. Sprinkle reserved oat mixture on top.
  6. Bake for 25–30 minutes or until golden and bubbling. Let cool completely before cutting into bars.

Notes

  • Let bars cool fully before slicing to prevent crumbling.
  • Use parchment paper for easy removal and clean edges.
  • You can use frozen blueberries, no need to thaw first.
  • Swap honey with maple syrup or agave if preferred.
